A Refreshing Drink
I went to bed by 9 pm yesterday. I knew I was tired, but wow. Eleven hours of sleep, and yet I still moved slowly all day today. I puttered around the house a bit, engaged and directed my children, put in a Walmart pick-up order for tomorrow morning, and read. After a snack lunch, I actually couldn’t hold my eyes open, and went and rested for an hour, dozing and reading. Why did I feel guilt over this? Why can’t I receive the gift of a summer break and relax into it without shame?
By 3 pm, I needed to go pick up Will from his job at Tropical Smoothie, and run into Publix for ingredients for grilled steak fajitas for tonight. Before going in, I scrolled through my camera roll and found a recipe for a Sparkling Lemon Ginger Apple Cider Vinegar drink that I had taken a screenshot of last month. I added ACV (with the mother) on my grocery list along with some San Pellegrino sparkling mineral water. I keep fresh ginger paste in our refrigerator and purchase that from Walmart. I don’t like dealing with fresh ginger and powdered doesn’t have a bright flavor, so this wonderful ginger paste is a GREAT thing to keep in the fridge for stir-frys, smoothies, and this drink!
About 30 minutes ago, I made the recipe and thoroughly enjoyed it out here on my porch. It’s bright, alkalizing, and refreshing. Something nice to sip on as our weather warms!
1 Tbsp Apple Cider Vinegar (with the mother)
juice of 1/2 lemon
1/2 tsp minced ginger or paste
2 tsp honey or stevia or sugar
1 can or bottle of sparkling water
Stir or shake all the ingredients in a quart-sized jar with ice and enjoy! Tomorrow I am going to try it by first brewing some Celestial Seasonings Peach tea, and then adding the ingredients.
My top-sirloin steaks are marinating for grilling. Soon I will cook some onions and red peppers together until lightly browned and soft. I was able to find perfectly ripe avocados at Publix for some fresh guacamole. I simply use avocados, salt, garlic, and lime juice. Sometimes some finely diced red onion, jalapeño, and cilantro will find their way in. But keeping things simple is usually best. Some freshly shredded Cheddar, jarred salsa, and flour tortillas will round it all out. It’s a delicious summertime meal on the back porch!
